Dry Ingredients
- 1 and 1/4 cups 156g all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Wet Ingredients
- 1/2 cup 113g unsalted butter, softened
- 1/2 cup 100g brown sugar
- 1/4 cup 50g granulated sugar
- 1 large egg room temperature
- 3/4 cup 188g creamy peanut butter
- 1 teaspoon vanilla extract
Topping
- 1 and 1/4 cups 250g mini M&Ms
Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
Whisk flour, baking soda, and salt in a bowl.
Cream butter, brown sugar, and granulated sugar until light and fluffy.
Add egg, peanut butter, and vanilla; mix until smooth.
Mix dry ingredients into wet ingredients until just combined.
Fold in most of the M&Ms, saving some for topping.
Chill dough for 30 minutes.
Scoop dough into balls and place on baking sheet.
Press extra M&Ms on top.
Bake 11–13 minutes until edges are set.
Cool on pan for 5 minutes, then transfer to rack.
