  • 6 tablespoons unsalted butter melted
  • 3/4 cup packed light or dark brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg room temperature
  • 1/4 teaspoon salt
  • 1/3 cup creamy peanut butter
  • 3/4 cup all-purpose flour
  • 1 cup mini Rolo candies or chopped regular Rolos
  • Caramel sauce for serving (optional)
  • Vanilla ice cream for serving (optional)

Instructions
 

  • Preheat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving an overhang for easy removal.
  • In a large bowl, melt the butter. Whisk in the brown sugar and vanilla extract until smooth, then add the egg and whisk until the mixture becomes light and glossy.
  • Stir in the salt and creamy peanut butter until fully combined.
  • Fold the flour into the batter just until no dry streaks remain. Avoid overmixing to keep the blondies soft and chewy.
  • Gently fold in 3/4 cup of the mini Rolo candies, then spread the batter evenly into the prepared pan. Press the remaining Rolos over the top.
  • Bake for 20–22 minutes, or until the edges are set and the center is still slightly soft.
  • Let the blondies cool in the pan for at least 15 minutes before lifting them out and slicing into 9 squares.
  • Serve as is, or drizzle with warm caramel sauce and top with a scoop of vanilla ice cream for an extra-indulgent dessert.

Notes

For the best peanut butter caramel blondies, use creamy, no-stir peanut butter to keep the batter smooth and the texture perfectly chewy. Be careful not to overmix the flour, as this can make the blondies dense instead of soft and tender. Bake just until the edges are set and the center is slightly under baked it will continue to firm up as it cools. Let the blondies rest for at least 15 minutes before slicing for clean, neat squares. For an extra indulgent treat, drizzle with warm caramel sauce and serve with a scoop of vanilla ice cream.
