Soft, fudgy cocoa cookies rolled in sugar for a crackled, bakery-style top. These easy homemade cookies are ready in about an hour, including chill time.

Ingredients
  

  • 2 cups all-purpose flour 250g
  • ¾ cup unsweetened cocoa powder 60g
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup unsalted butter softened (226g)
  • 1 cup brown sugar packed (210g)
  • ½ cup granulated sugar 100g
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • ¼ cup granulated sugar for rolling (50g)

Instructions
 

  • Preheat oven to 350°F and line baking sheets with parchment paper.
  • Whisk flour, cocoa powder, baking soda, and salt in a bowl.
  • Beat butter, brown sugar, and granulated sugar until light and fluffy. Add egg, egg yolk, and vanilla.
  • Mix in dry ingredients until just combined. Chill dough for 30 minutes.
  • Scoop dough into balls, roll in sugar, and place on baking sheets.
  • Bake for 9–11 minutes until edges are set and centers look slightly soft.
  • Cool for 5 minutes before transferring to a wire rack.

Notes

For the best texture, use softened butter instead of melted butter and chill the dough before baking to help prevent spreading. Avoid overbaking the cookies so the centers stay soft and fudgy. Store the baked cookies in an airtight container at room temperature for up to 5 days to keep them fresh.
